Because in this, Tinkerbell’s supposed to be the hero. More positive traits have been assigned to her because the children who watch this will want to be a fairy like Tinkerbell, and thus see Tinkerbell as a role model. If Tinkerbell were to be solely the jealous, short-tempered, mischief-making fairy we knew from the original Disney films, children would want to emulate that. Also, parents would see past that and not want their children to see these movies - Disney loses out on a whole lot of money.
They didn’t completely remove Tinkerbell’s spiteful personality, however. She still gets angry - with good reason - but it’s written in a way that shows that being spiteful and jealous and angry isn’t exactly a good thing that you want to be like. Tinkerbell faces consequences for the actions she makes due to spite and mischief. Also, this helps children understand that yes, you will get mad, yes, you will make mistakes. In Peter Pan, it was Peter and Wendy who were supposed to have the good and nice traits that the young audience were supposed to like and root for, and Tink was only there to do mischief.
So, to put it shortly - children would see Tinkerbell as a role model, and Disney wanted to make her fit that role more. These movies are made for impressionable young children to learn about friendship etcetc so having the Original Tinkerbell as the protagonist wouldn’t have suited the theme. Yes, they’ve changed her personality, but she still retains some features that we know and love.
